100% Pure birch syrup

     As April arrives in the Eastern Townships of Québec, so does the season for making birch syrup. Made from yellow birch sap, we have an innovative process that avoids the common, over-caramelization that occurs in most other birch syrups, giving their finished product a bitter after-taste. We collect our sap in the birch woods in an off-grid camp and evaporate it most of the way over our wood fired evaporator there amidst the trees. The concentrated sap is then brought back to our home where it is carefully finished with our final steam process to arrive at the perfect concentration.

     While maple season is two months long, birch season is only one, and where forty gallons of maple sap make one gallon of syrup, one must gather one hundred and twenty gallons of birch sap to make one gallon of syrup. This makes collecting and processing much more intensive and time consuming.

     Birch syrup has a delightful, rich, smooth, flavour making it ideal for sauces and marinades, while its sweetness and light, fruity notes make it a great choice to drizzle over ice cream and other desserts.

     Our birch syrup is made from 100% birch sap insuring you are getting a fantastic and authentic product.
